    ❤️ My signature cake holds so much sentimental value for me because this was my first ever complicated pastry I made as a self-taught pastry chef! It’s gone through like 10 revisions since I’ve first made it? HAHAHA

    🧡 This is just a little snippet of my spraying process but it’s meant to resemble a cacao pod and the variety of vibrant colors it comes in!

    💛 The cake consists of an ultra rich chocolate mousse made with 85% dark chocolate, an orange blossom creme, an orange and almond cacao nib sponge layer, and a crunchy milk chocolate wafer layer. It’s wowing in flavour and texture too, which was a key element in designing this pastry because I value texture in pastries and can’t really enjoy a one-note/one-texture cake.
