• [VIDEO] Cafe Vlog: Creating a Yuzu Sesame Entremet

    So, I heard on the radio that Christmas is in 70 days or so, and while in quarantine, I’ve been scouring the social media platforms for new things to create. I already had the flavour profiles I wanted, but decor inspiration is SO limited these days 🥺 I just knew I wanted it WHITE and frosty for the festive season.

    So this is a Yuzu Sesame cake made up of:

    🍋 Yuzu & White Chocolate Mousse

    🖤 Black Sesame Creme

    ◼️Black Sesame Almond Sponge

    🍘 Roasted Brown Rice and Milk Chocolate Crunch

    🤍 White Chocolate Glaze

    🌿 Frosted Dill

    As complicated as it sounds, it’s not THAT bad. I really love how light this cake is and it’s definitely zesty from the Yuzu! Not too sweet and I love how the roasted rice base ties in and makes it more Asian-inspired. Will probably change the cake base to something more zesty or tea based? 🥺

    Catch this at Lemuel Chocolate in Nov-Dec 🤍 it makes me super super happy and proud of myself when I create something beautiful! This was definitely a challenge as I usually don’t like working with glaze, but I’m happy to push myself to grow!
